Beautiful: it’s a gorgeous drink to serve for brunch, summer gatherings, or anytime you want something fizzy and fun.
Easy to make with variations: if you have canned lychee soda, or lychee nectar, you can easily make this at home, even if you don't have lychee syrup.
What is matcha?
Matcha is a finely ground Japanese green tea.

Ingredients you'll need
- matcha: sifted; use a high quality matcha green tea powder for the best color and flavor
- hot water: about 80°C/176°F
- ice
- lychee syrup: if not using lychee soda
- carbonated sparkling water: chilled
- OR lychee soda: chilled; omit the lychee syrup

How to make matcha lychee soda
Prepare the matcha:
In a small bowl, whisk matcha with hot water until smooth and frothy.
Assemble:
To a tall glass, add ice cubes, lychee syrup and pour chilled sparkling water over the ice, leaving a bit of space at the top. [OR if using lychee soda: add ice cubes, and pour lychee soda over top].
Slowly pour the whisked matcha over the back of a spoon to float it on top of the soda.
Top with an extra lychee on a skewer.
Stir gently before serving.
How to serve
Serve the Matcha Lychee Soda with snacks such as curry puffs, green onion pancakes, or baked goods such as Lychee Rose Cream Roll Cake.

Variations
Swap lychee for longan or rambutan syrup for a different, but similar twist.
Add in lychee jellies for more lychee flavor.
Make it a float by adding a scoop of lychee oolong sherbet or vanilla ice cream on top.
Turn it into a sparkling matcha yuzu with a splash of yuzu juice.
Add in a splash of lychee liqueur for an alcoholic version.
Expert tips
Use ceremonial or high-quality culinary matcha for the best color and taste.
If using a sweetened lychee nectar, reduce or omit the lychee syrup, to your taste.
Add fresh mint or lime for garnish.

Yeah Lychee's are in season! We could not be happier. With this delicious matcha lychee soda recipe, we need even more. You could just use canned lychee syrup and sparkling or soda water but we are so craving the fresh right now! Yum
