What is yuzu?
Yuzu is a tart and aromatic citrus fruit commonly used in Japanese and Korean cuisine.
It tastes like a cross between grapefruit, mandarin, and lemon.
In this drink, it adds a fragrant citrusy tang that beautifully balances the earthy bitterness of matcha.

Matcha is a Japanese finely ground green tea.

Ingredients you'll need
- matcha: use a high quality matcha for the best flavor and color
- hot water
- yuzu marmalade: or you can use yuzu juice with a little honey or simple syrup
- carbonated sparkling water
- ice cubes

You can find these ingredients at Japanese/Korean grocery stores or Asian supermarkets.

How to make sparkling matcha yuzu
Prepare the matcha:
Sift the matcha powder into a small bowl or jar.
Pour in hot water and whisk using a bamboo chasen (whisk) or an electric frother until smooth and frothy.
Assemble:
Add yuzu marmalade to a serving glass.
Fill glass with ice.
Pour in sparkling water, and top with the whisked matcha.
Serve immediately.

Expert tips
Sift your matcha to avoid clumps and ensure a smooth texture.
Use ceremonial grade matcha for the best flavor and vibrant green color.
Adjust the amount of matcha to your taste -- if you prefer a stronger tea, add more, and vice-versa.
If using bottled yuzu juice, adjust the amount depending on the flavor and tartness.

Iced Sparkling Matcha Yuzu

Ingredients
- ½ teaspoon matcha sifted
- 2 tablespoon hot water about 80°C/176°F
- 1-2 tablespoon yuzu marmalade to your taste
- ice cubes
- 1 C carbonated/sparkling water
Instructions
