Ingredients you'll need
- whole milk: dairy or non-dairy alternative
- Earl Grey tea bags: or loose-leaf
- cocoa powder
- dark chocolate: chopped; use a high-quality chocolate for the best flavor -- I like using a 72% dark chocolate (Callebaut)
- granulated sugar: or sweetener; to your taste
- earl grey extract: enhances the earl grey flavor
- whipped cream: for topping (optional)
How to make earl grey hot chocolate
In a saucepan, heat 1 C milk until scalding hot (don't boil).
Remove from heat and steep the Earl Grey tea bags in the hot milk for 4-5 minutes.
Remove and discard the tea bags.
To the heated milk tea, add cocoa powder, chopped chocolate, and sugar.
Heat gently over medium heat, whisking until smooth and fully melted. Do not boil.
Remove from heat, add in earl grey extract, bergamot oil and vanilla extract (if using).
Pour into mugs and top with whipped cream, a dusting of cocoa powder, or grated chocolate.
Serve warm.


How to serve
Serve the earl grey tea hot chocolate with strawberry earl grey pop tarts, a slice of earl grey chocolate cake or raspberry earl grey scones.
Variations
Add a pinch of lavender buds or lavender extract/lavender syrup for a London Fog twist.
Make it iced: chill and serve over ice with cold milk
Stir in orange zest, or add a drop of bergamot oil to enhance the bergamot citrus notes.
If you prefer a milk chocolate, you can definitely use that.
Expert tips
Use good quality dark chocolate (72%) for best flavor and richness.
Steep the tea stronger than you'd normally enjoy it. It should hold up against the chocolate.
Use a double bergamot Earl Grey tea for more floral flavor.
Make it dairy-free: use oat, almond, or soy milk.
