Ingredients you'll need
Filling:
- Strawberry Earl Grey Jam: you can use another jam if you prefer; such as strawberry rhubarb compote
Pastry:
- all-purpose flour: regular flour
- unsalted butter: cold, cubed
- granulated sugar
- sea salt
- ice cold water: must be cold, to ensure flaky layers
Egg wash:
- egg: beaten
- coarse sanding sugar: optional; adds sweetness, texture and crunch
Glaze:
- powdered sugar: or icing sugar
- milk: or cream
- crushed freeze-dried strawberries: for color; or gel food coloring, optional
How to make homemade pop tart pastries
Steep the tea: brew a strong cup of Earl Grey and let it steep to infuse its floral aroma.
Cook the jam: combine strawberries, sugar, lemon juice, and earl grey tea in a saucepan. Simmer until thick and jammy, add in bergamot oil, then let cool completely. [You can do this a day ahead].

Make the dough: in a food processor, blitz together flour, sugar, salt, and butter until crumbly.
Add in ice cold water and form into a dough. Wrap and chill for at least 30 minutes.
Assemble: lightly flour your work surface, roll out the dough and cut into rectangles.
Fill with jam, seal the edges, and crimp with a fork. Brush tops with egg wash and sprinkle on sanding sugar.
Bake: bake pastries at 375°F (190°C) until golden and crisp.
Glaze: let the pop tarts cool before glazing. Garnish with crushed freeze-strawberries if desired.

How to store & reheat
It's best to enjoy these homemade pop tarts freshly made on the same day.
If you have any leftovers, store the homemade toaster pastries in an airtight container at room temperature for up to 2 days.
You can reheat the strawberry pop tarts by popping them into a toaster oven.
Note: unlike conventional, commercially-made pop tarts, the glaze will melt, so you can either glaze just before serving, or reheat at a lower temperature for a shorter period of time.
Expert tips
Chill the dough: it keeps the pastry flaky and easier to handle. You can make the pastry dough ahead of time and keep it in the fridge. Remove the dough from the fridge about 20 minutes prior to rolling it out.
Let the jam cool completely: to avoid soggy pastry.
Runny jam? Cook the jam with 1 teaspoon of cornstarch mixed with 1 teaspoon cold water to thicken.
Don't overfill: or you'll risk the jam seeping out of the pastries.
Keep the edges of the pastry dough clean to ensure a good seal. (Wipe clean with paper towel if need be).
Customize it: try adding a touch of vanilla bean to the glaze or swap in a different tea or different filling (try Earl Grey Milk Jam, Gianduja (Chocolate Hazelnut), or Cherry Pie Filling) for a new flavor profile.

Strawberry Earl Grey Pop Tarts
For accuracy and precision in baking recipes, use weight (metric) measurements when available.
Ingredients
Pastry:
- 125 g all-purpose flour
- 15 g granulated sugar
- pinch sea salt
- 113 g (1 stick) unsalted butter cold and cubed
- 30-45 ml cold ice water
Filling:
- ¼ C Strawberry Earl Grey Jam or other strawberry jam
- 1 teaspoon cornstarch + 1 teaspoon cold water optional, if your jam is runny
Egg wash:
- 1 egg beaten (for brushing)
- 1 tablespoon coarse sanding sugar optional
Glaze (optional):
- 60 g powdered sugar
- 1-2 tsp whole milk
- splash of vanilla extract
- a tiny smidge of red gel food coloring optional, use a toothpick to dab a little coloring
- freeze-dried strawberries optional
Instructions
Make the pastry dough:
- In a food processor, combine the flour, sugar, and salt.
- Add in the cold butter in pieces and intermittently process until the mixture resembles coarse crumbs.
- Add ice cold water 1 tablespoon at a time and blitz until the dough roughly comes together.
- Dump the mixture onto a large piece of plastic wrap, shape into a disc or rough square, wrap tightly with plastic wrap and chill in the fridge for at least 30 minutes.
Assemble:
- Preheat oven to 375°F/190°C. Line a baking sheet with parchment.
- On a lightly floured surface, use a rolling pin to roll the dough out to about ⅛" thickness.
- Use a pastry wheel cutter or sharp knife to trim off the edges and cut into 8 equal rectangles (roughly 2.5" x 4" each).
- Spoon about 1 tablespoon of strawberry earl grey jam onto 4 rectangles, spreading slightly but leaving a ¼" border. Try to not get any jam on the edges (or they won't seal properly).
- Use a pastry brush to brush the edges with egg wash. Top each rectangle with remaining dough pieces and press the seams firmly to seal with a fork.
- Transfer the pastries onto a lined baking sheet.
- Prick the tops with a fork and brush with egg wash.
- Sprinkle the tops with coarse sanding sugar, if desired.
- Bake at 375°F/190°C for 22–25 minutes, or until golden brown.
Glaze:
- In a bowl, combine powdered sugar with milk and vanilla and mix until smooth.
- Add in crushed freeze-dried strawberries or a tiny smidge of gel food coloring (if using, for color).
- Once the pop tarts are cool, drizzle glaze over the top and finish with additional crushed freeze-dried strawberries.
