What is pandan?
Pandan, also referred to as screwpine, is a tropical plant grown for its distinctive, fragrant, long and slender fan-shaped green leaves.
This plant finds extensive use in Southeast Asia as a flavor enhancer in a variety of dishes.
Typically, pandan leaves are processed or blended to extract their unique vanilla-like flavor, which can be used to create pandan syrup or incorporated into recipes like coconut sticky rice pandan custard (seri muka) or pandan cake.

Ingredients you'll need
- heavy whipping cream: cold, with at least 36% milkfat
- pandan extract: or pandan paste; you can find it sold in small bottles in Asian grocery stores and adds a vivid bright green color (typically does include artificial green food coloring)*
- powdered sugar: optional, for a little sweetness
- espresso: or strong coffee (such as Vietnamese coffee) or cold brew
- ice cubes
- milk: you can use a non-dairy alternative if you wish, such as coconut milk, or soy milk
- pandan syrup: adds a little extra sweetness and pandan flavor
*Note: if you're not a fan of the artificial food coloring, you can use fresh or frozen pandan leaves and make a pandan syrup instead -- the color will not be as intense.

How to make it
Make the pandan whipped cream:
In a separate glass, combine heavy whipping cream with a few drops of pandan extract.
Add 1 teaspoon powdered sugar if desired.
Whip with a wire whisk until the cream reaches firm peaks.
Assemble:
Pour a shot of espresso to a tall glass.
Add pandan syrup, if using.
Fill with ice cubes.
Pour in the milk.
Top with pandan whipped cream.
Alternatives & variations
Instead of pandan whipped cream, you can also pair the pandan latte with vanilla sweet cream cold foam or add matcha cold foam to make a variation of matcha pandan latte.
For a hot pandan latte, omit the ice cubes and warm the milk prior to assembling the drink.
What to serve with a pandan latte
Enjoy the pandan coffee with sweet treats such as Malaysian coconut rolled crepes (kueh dadar), durian mochi, pandan durian cake, or pandan mochi waffles.Or enjoy it alongside a meal of Malaysian laksa noodle soup, Vietnamese bun bo hue, sticky chicken wings, or Hainanese chicken rice.
Expert tip
For a cleaner, less acidic flavor, use cold brew coffee.
