What is sakura?
Sakura is the Japanese term for cherry blossoms, which are tiny pink and white flowers that bloom in the spring time.
Are cherry blossoms edible?
Cherry blossoms are edible and are typically salted and pickled.
Sakura blossoms are used in baking, desserts, made into a syrup, or added to various drinks, such as a strawberry cherry blossom latte, or an iced sakura latte.
What do they taste like?
Sakura cherry blossoms have an earthy, floral and subtle fruity taste, which makes it a great pairing with matcha green tea, such as in this delicious, creamy Sakura Matcha Tea Latte.

The Japanese term hanami refers to cherry blossom/sakura viewing in Japan, which occurs in the Spring time.
Where to find cherry blossoms?
Choose cherry blossoms that are for culinary use. I don't recommend using the cherry blossoms that you find in the neighborhood unless you know that the trees have not been sprayed with pesticides/herbicides, etc.
You can find sakura blossoms that are salted and pickled online. You will need to soak and rinse the blossoms in water before using, as they can be very salty.
Alternatively, cherry blossom powder, or sakura powder is a convenient shelf-stable choice that is becoming more readily available. You can find sakura powder online.

Ingredients you'll need
- heavy whipping cream: cold; at least 36% milkfat
- whole milk: or non-dairy alternative if you wish
- vanilla extract
- powdered sugar: or sakura cherry blossom syrup; for a little sweetness, to your taste
- sakura/cherry blossom powder: easily dissolves in the cream; choose a cherry blossom powder that is predominantly dried sakura paste and contains natural coloring... see expert tips below.
Where to buy?
You can find these ingredients at your local supermarket or grocery store. For sakura/cherry blossom powder, you can find it online or in specialty Japanese stores.

How to make the sakura cold foam
In a mason jar, combine heavy cream with whole milk, vanilla extract and sakura powder.
Use an electric frother to foam up the mixture. (Be careful not to overwhip).
Pour onto your desired drink and serve immediately.


How to serve
Use the sakura cold foam in any drink that you like.
Try it on an iced matcha latte, cold brew coffee, or sakura strawberry latte.

How to store
Store any leftover cold foam cream in an airtight container in the fridge for up to 2 days.
Expert tips
Cold heavy cream will whip up more easily.
If the sakura cream has been sitting for a while, you will need to give the cold foam a stir before using, as the cream will separate.
If you're using the sakura cold foam in a warm/hot drink, the foam will quickly disperse into the drink.
Most sakura powders are colored with natural or artificial colors to enhance their pink color. Additionally, some cherry blossom powders will have added sweetener to them and others are actually sakura latte powders that will contain extras like sugar, milk powder and corn syrup. Read the labels carefully.

Haha, I know -- if you're certain they don't have any pesticides, you could use them, but it's probably better to go with packaged in this instance 🙂
