What is mee goreng?
Mee goreng is a Southeast Asian dish consisting of yellow egg noodles stir-fried in a sweet and savory, slightly spicy sauce, made popular by a brand called Indomie.
The dish is especially popular in Malaysia, Indonesia, Brunei and Singapore.
There are many variations and can include ingredients such as shallots, garlic, egg, tofu, shrimp, chicken, and vegetables such as bean sprouts and cabbage.
The sauce used in mee goreng is sweet and savory, with soy sauce, sweet soy sauce (kecap manis), chili, and can include tomato for extra umami flavor.
This version leans into bold, modern flavors with the addition of my Miso Chili Oil, which brings an umami-rich heat that makes the noodles incredibly addictive.

Ingredients you'll need
- yellow egg noodles
- miso chili oil: flavors the stir-fried noodles
- pork lard: or vegetable oil
- sweet soy sauce: or sub in 1 tablespoon brown sugar + 1 tablespoon light soy sauce
- light soy sauce: regular soy sauce
Optional:
- fried egg
- fried shallot/garlic/onion
- sliced tomato
- bean sprouts/cabbage
- protein: shrimp, pork, chicken or tofu
- green onions/cilantro
- Thai chili

How to make mee goreng at home
Cook the noodles:
Bring a pot of water up to a boil.
Add the noodles and cook according to the package instructions.
Drain the noodles in a colander and rinse under cold water. Drain well.
Assemble:
To the pot, over medium heat, add in pork lard, chili oil, sweet soy sauce, light soy sauce and the well-drained noodles.
Stir fry the noodles until evenly coated in the sauce.
Transfer to a plate and garnish with the fried shallot, fried egg, green onion, and Thai red chili.
Serve immediately.
How to serve
Serve mee goreng noodles as a snack, lunch or light dinner.
Pair the noodles with dumplings, chili oil wontons, blanched yu choy, or scallion pancakes.
How to store
Mee Goreng is best enjoyed fresh, but leftovers keep well for up to 2-3 days in the fridge in an airtight container.
Expert tips
Don't overcook the noodles: fresh yellow egg noodles only need a few minutes of cooking time.
Customize it: swap shrimp for chicken, add fish cakes, or keep it fully vegetarian.

Ingredients
- 1 pkg (125g) yellow egg noodles
- 1 teaspoon pork lard or vegetable oil
- 1 heaped tsp miso chili oil
- 1 tablespoon sweet soy sauce kecap manis, or sub with 1 tablespoon soy sauce and 1 tablespoon brown sugar
- 1 teaspoon light soy sauce
Garnish:
- fried shallot/garlic/onion
- fried egg
- green onion
- Thai red chili
