What is hoisin sauce?
Hoisin sauce is a thick, dark brown condiment commonly used in Chinese cuisine.
It's made from fermented soybean paste, garlic, vinegar, sesame oil, and sugar, making it a perfect glaze for various meats and seafood.
Hoisin sauce is used as an accompanying dipping sauce for Asian dishes such as rice noodle rolls, Peking duck, roasted BBQ pork (char siu), Vietnamese pho, or Chinese spring rolls.
What does hoisin sauce taste like?
Hoisin sauce has a bold, sweet, salty and savory flavor.
Ingredients you'll need
- cod fillet: or white fish; boneless and skinless; fresh or frozen (thawed overnight)
- black pepper: or white pepper
- hoisin sauce: is a thick, dark sauce with a slightly sweet flavor; I recommend using a thick Chinese hoisin sauce by Koon Chun and not ones that are runny
- chili oil: omit if you don't like spicy; sub with 1 tablespoon of soy sauce
- sesame oil: for aroma
How to make hoisin glazed cod
Prepare the fish: pat the cod fillet dry and season lightly with black pepper (or white pepper).
Make the glaze: in a bowl, mix hoisin sauce, chili oil (if using) and sesame oil. Spread the mixture over the top of the fish.
Cook the fish: bake the cod at 450F in the oven for 8-10 minutes, or until it just starts to flake.
Garnish: finish with a sprinkling of sesame seeds and green onions, if desired.
How to serve
Serve the hoisin glazed cod with steamed rice or noodles, garlic bok choy, steamed yu choy, and other proteins such as baked tofu, or steamed pork patty.
How to store
Store the hoisin cod in an airtight container in the fridge for up to 3 days.

Choose fresh: if possible, use fresh cod for the best texture and flavor.
Don't overcook: cod is delicate and should be just opaque and flaky.
