Ingredients you'll need
- 1 salmon fillet (about 8 oz / 230g): de-scaled; skin on or off, depending on your preference
- maple syrup: use pure maple syrup; or you can sub with honey for a variation
- soy sauce: regular or light soy sauce; use tamari for gluten-free
- rice vinegar: or lemon juice
- garlic powder: or fresh minced garlic
- black pepper
Optional: (garnish)
- chopped green onion
- sesame seeds

How to bake salmon
Preheat oven to 400°F (200°C).
Line a baking dish or sheet pan with parchment paper or aluminum foil.
Lay salmon fillet in the baking dish.
In a small bowl, whisk together maple syrup, soy sauce, rice vinegar, garlic powder, and black pepper.
Pour the marinade over the salmon.
Let it sit for about 10 minutes to absorb the flavors.
Bake at 400F for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork.
Remove from oven.



How to serve
Serve the maple soy salmon warm with steamed rice, fried rice, mashed potatoes, or roasted vegetables.
How to store
Store any leftover baked salmon in an airtight container in the fridge for up to 3 days.
Cooking variation
To steam the fish en papillote style, wrap up the fish in parchment paper (or aluminum foil) and bake in the oven for about the same amount of time, depending on thickness.
This is a more gentle style of cooking/steaming the fish, which yields even more moist, tender flaky fish.
Expert tips
If you encounter white blobs on the fish after cooking, it's just coagulated protein (albumin), which can happen when the fish is cooked at high heat. It is totally harmless and safe to eat.
You can make this with fresh or frozen salmon. If using frozen salmon, defrost overnight in the fridge.

- Preheat oven to 400°F/204°C.
- Line a baking dish or sheet pan with parchment paper or aluminum foil.
- Lay salmon fillet in the baking dish.
