Ingredients you'll need
Main:
- smoked duck breast: I used one that is fully cooked; can be packaged and frozen
Broth:
- sesame oil: toasted; for flavor
- garlic cloves: minced
- chicken broth: poultry broth, or duck broth if you have it; or sub with dashi stock or water
- light soy sauce: regular soy sauce
- dark soy sauce: is less salty than regular soy sauce; adds color
- granulated sugar: for balancing out the flavor
- rice vinegar: adds a little tang
- yuzu juice: adds brightness and citrus flavor to the broth; if you don't have it, you can add a little more rice vinegar instead
Noodles:
- ramen noodles: fresh or dried
Toppings: (optional)
- soft-boiled eggs
- chili oil
- furikake
- green onion
- cilantro
- jalapeno
- nori/seaweed
- fresh corn

You can find these ingredients at Asian supermarkets or Japanese grocery stores.
How to make duck ramen noodles
Prepare the duck:
Gently warm the duck (sear skin-side down in a skillet or frying pan, until warmed and slightly crisp) or bake in the oven at 350F for 10 minutes.
Let the duck rest for a few minutes before slicing against the grain. Set aside.
Make the broth:
In a small saucepan, over medium heat, add in sesame oil and lightly sauté minced garlic.
Add in the chicken broth, light soy sauce, dark soy sauce, sugar, and rice vinegar.
Simmer gently for about 5 minutes. When about to serve, stir in the yuzu juice.
Cook the noodles:
In a separate pot, cook the ramen noodles according to package directions.
Drain well.
Assemble:
Divide the cooked noodles between two bowls.
Pour the hot broth over the noodles, then top with warm duck slices and desired toppings.
How to serve
Serve the duck ramen noodles with other dishes such pork dumplings, chicken yakitori, or shrimp tempura sushi.
Pair with a refreshing iced sparkling yuzu, sparkling matcha yuzu, iced lychee dragonfruit, lychee soda, or raspberry lychee fizz.
How to store
Store any leftovers in separate, airtight containers in the fridge for up to 2 days.
Expert tips
Don’t boil the yuzu: adding yuzu juice to the broth at the end preserves its bright flavor.
Defrost the night before: if using frozen pre-packaged smoked duck breast, defrost it in the fridge overnight prior to warming it.
If you have duck broth or poultry broth on hand, you can use that in place of the chicken stock.
Customize it: add other toppings such as corn, nori seaweed, shichimi togarashi.
