Ingredients

Main:

  • 1 smoked duck breast warmed and sliced

Broth:

  • 1 teaspoon sesame oil
  • 1 garlic clove minced
  • 2 C chicken broth or dashi, water
  • 2 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • ½ teaspoon granulated sugar
  • 1 teaspoon rice vinegar
  • 1 teaspoon yuzu juice

Noodles:

Instructions

Prepare the duck:

  • Gently warm the duck (sear skin-side down in a skillet or frying pan, until warmed and slightly crisp) or bake in the oven at 350F for 10 minutes.
  • Let the duck rest for a few minutes before slicing against the grain. Set aside.

Make the broth:

  • In a small saucepan, over medium heat, add in sesame oil and lightly sauté minced garlic.
  • Add in the chicken broth, light soy sauce, dark soy sauce, sugar, and rice vinegar.
  • Simmer gently for about 5 minutes. When about to serve, stir in the yuzu juice.

Cook the noodles:

  • In a separate pot, cook the ramen noodles according to package directions.
  • Drain well.

Assemble:

  • Divide the cooked noodles between two bowls.
  • Pour the hot broth over the noodles, then top with warm duck slices and desired toppings.
