Main: 1 smoked duck breast warmed and sliced Broth: 1 teaspoon sesame oil 1 garlic clove minced 2 C chicken broth or dashi, water 2 tablespoon light soy sauce 1 tablespoon dark soy sauce ½ teaspoon granulated sugar 1 teaspoon rice vinegar 1 teaspoon yuzu juice
Prepare the duck: Gently warm the duck (sear skin-side down in a skillet or frying pan, until warmed and slightly crisp) or bake in the oven at 350F for 10 minutes.
Let the duck rest for a few minutes before slicing against the grain. Set aside.
Make the broth: In a small saucepan, over medium heat, add in sesame oil and lightly sauté minced garlic.
Add in the chicken broth, light soy sauce, dark soy sauce, sugar, and rice vinegar.
Simmer gently for about 5 minutes. When about to serve, stir in the yuzu juice.
Assemble: Divide the cooked noodles between two bowls.
Pour the hot broth over the noodles, then top with warm duck slices and desired toppings.
