What is a croissant?
A croissant is a French laminated pastry consisting of layers of butter and yeasted dough rolled and folded into a crescent shape, from which it gets its name.
It has a light, flaky, buttery texture that pairs well in sweet or savory applications, such as in Double-Baked Almond Croissants, or a croissant bake.
What is a sandwich?
A sandwich is type of food where ingredients such as meat and vegetables are piled between slices of bread.
The type of bread can vary, as long as it encases the ingredients (eg. a sandwich using waffles as the "bread", or English muffin egg sausage sandwiches).
What is prosciutto?
Prosciutto is an Italian dry, uncured ham that is thinly sliced.
It is not smoked and has a delicate, salty and slightly sweet flavor.
Prosciutto is usually made with the pig's hind leg or thigh and appears pink in color.
Why you'll love this recipe
This croissant sandwich recipe is:
Easy to assemble: it really is just slicing the vegetables and then stacking them to make the sandwich.
Fresh and delicious: the croissant holds up to the fresh vegetables and tasty meat, making it a great choice for lunch, or even dinner.
Versatile: change the ingredients to switch it up.
Great for a large crowd: if you have a large number of people to feed, you can scale up the recipe and assemble ahead of time for brunch, or a lunch party.
Ingredients you'll need
- fresh croissants: you can make your own, or easily use bakery/store-bought
- slices of prosciutto: however, you can change it up and use any meat such as black forest ham, bacon, turkey slices, chicken, shaved roast beef etc.
- avocado: peeled, pitted and sliced
- lettuce/mixed greens
- fresh tomato: sliced
- cheese: Havarti or Monterey jack would be great choices
- honey mustard: a mixture of honey and mustard, or you can use mayonnaise instead
How to make a croissant sandwich
Slice a croissant in half equatorially.
Spread honey mustard on the bottom half of the croissant.
Layer with mixed greens/lettuce, prosciutto (or your choice of meat), sliced tomato, avocado and cheese.
Place the top half of the croissant and enjoy.
How to serve
Serve the croissant sandwich for lunch, brunch, or even dinner.
I like to slice my croissant sandwiches in half before serving.
For a fuller meal, pair with fries, tater tots, a mixed green salad, quinoa salad, or kabocha squash soup.
How to store
Store the croissant sandwich in an airtight container in the refrigerator until ready to serve.
If assembling beforehand, it's best to make it up to 1 day before serving.
Tip: you may prefer to omit adding in the tomatoes until just prior to serving as it may make the sandwich soggy.
Expert tips
Use a toothpick to secure (but don't forget to remove it prior to serving) if you add too many toppings to the sandwich!
You can split the croissants in half and lightly toast in the oven for a few minutes at 350F to prevent the sandwich from becoming soggy.
Make a larger batch to feed a crowd!
Variations
If you don't have prosciutto, you can choose any type of protein for the croissant sandwich.
Try shredded or sliced rotisserie chicken, sliced pan-fried or baked tofu, black forest or deli ham, bacon, bologna, roast beef, turkey breast, or smoked salmon.
Add sliced cucumbers, red onions, sprouts, microgreens, and other veggies if you prefer a more veggie-forward sandwich.
For a decadent sandwich, add a pan-fried egg to the croissant sandwich prior to serving.
What to do with leftover croissants?
Turn them into almond croissants, croissant breakfast sausage and egg sandwiches, soak them in a custard to make croissant bread pudding, or layer with tomato sauce, pepperoni and mozzarella cheese to turn them into pizza croissant bake.

Holy cow this looks amazing! We love sammiches around here, but we don't often use croissants. I'm not sure why not. I need to change that. The prosciutto and Monterey jack combo is calling my name right now!

Thanks David, my kids love croissant sandwiches, so they're kind of a staple around here! 🙂
