Why this recipe works
Each crispy rice grain is evenly coated with matcha green tea... if you've ever wanted make your own matcha crispy rice, this is it!
It's akin to a clodhopper chocolate in that it's a delicious clump that is crunchy and sweet.
Paired with milk, these Matcha Crispy Rice Clusters are absolutely delicious and will take your breakfast cereal eating to a new level.
Note: Using homemade matcha marshmallows will yield the best result.
Ingredients you'll need
- crisp rice: also known as Rice Krispies, which is a cereal made with rice used in Matcha Rice Krispie Squares; you could use puffed rice as an alternative
- homemade matcha marshmallows: yields the best result; don't use store-bought for this recipe
- sea salt: for balancing the flavour
- vanilla extract: adds more flavour
- unsalted butter: if using salted butter, omit the sea salt
- black sesame seeds: optional
How to make it
In a large microwave-safe bowl, combine the homemade matcha marshmallows with butter, vanilla extract and sea salt.
Microwave for 20-25 seconds, until partially melted. (The marshmallow mixture will puff up).
Dump in the crisp rice, black sesame seeds (if using) and coat the mixture evenly with a spatula.
Transfer the matcha crispy rice into a parchment-lined baking tray (I used a 7.5" by 6" pan) and press down firmly.
Let the matcha crispy rice dry and set, uncovered in a draft-free location, at least overnight.
The next day, check to see it has set -- break off a clump -- if the mixture is still wet, preheat oven to 250F and place it in for 20-30 minutes to completely dry out.
Let it completely cool and break off clusters with your hands and place into a dry, airtight container at room temperature for up to 1 week.
Expert tips & troubleshooting
The matcha crisp rice hasn't dried out
If the mixture is still wet from the sugar in the marshmallows, preheat oven to 250F and place it in for an additional 10-15 minutes to completely dry out.
The matcha crispy rice should hold together in clumps but be dry and brittle.
How to serve
Serve the Matcha Crispy Rice Clusters Cereal with any milk of your choice, such as soy milk.
How to store
Store in a dry, airtight container at room temperature for up to 1 week.
