Unique: Asian-inspired by the flavors of Thai red curry and basil chicken, combined together on light and airy pizza dough.
Easy to make: using store-bought red Thai curry paste is a quick and easy way to build flavor and act as the pizza sauce base.
Adaptable: don't like it too spicy? Reduce the amount of curry paste and add more sugar and coconut milk. Prefer a green curry version? Use Thai green curry paste instead.
Ingredients you'll need
For the Thai curry sauce:
- red Thai curry paste: is a thick paste of blended red Thai chilies, spices and ingredients including lemongrass, galangal, shallots and kaffir lime leaves; I prefer using Aroy-D's red curry paste; but you can use any one that you like; it should be quite thick and not watery
- coconut cream or coconut milk: to thin out the curry paste; full-fat, canned; if the curry paste sauce is still too thick, add another tablespoon of coconut milk
- granulated sugar: the amount will depend on how salty the red curry paste is, so adjust to your to taste
Pizza dough:
- 1 batch pizza dough: makes about two x 14" pizzas or 3 x 9-10" pizzas
Toppings:
- mozzarella cheese: you can use fresh mozzarella or shredded
- chicken breast: cooked with Thai curry paste
- tomato: sliced
- Thai basil: if you can't find Thai basil, you can use regular Italian basil
- kaffir lime leaves: optional; but adds a limey fragrant flavor; you can find them fresh or frozen in Asian supermarkets
- cilantro: chopped; optional
- jalapeno: or red Thai chili, if you like it extra spicy

You can find most of these ingredients at large supermarkets with an International aisle or Asian grocery stores.
How to make Thai chicken pizza
Prepare the chicken:
Flatten the chicken and place onto a baking sheet lined with aluminum foil.
In a small bowl, combine the red curry paste and coconut cream until it is incorporated.
Spread the sauce on both sides of the chicken.
Broil at 500F on an oven rack set 5-6" from the top for 8-10 minutes per side, or until an instant-read thermometer reaches a temperature of 165F at the thickest part of the chicken breast.
Remove from oven and let cool.
Slice chicken into pieces. Set aside for later.
Preheat oven:
Preheat a baking steel or pizza stone on the lowest rack in the oven at 500F.
Make the sauce:
In a bowl, combine red curry paste, coconut milk and sugar.
Stir until the mixture comes together and give it a taste, adjust the seasoning as needed.
Assemble:
On a lightly floured work surface, stretch out the pizza dough to about 12" in diameter and place onto on a large piece of parchment paper.
Spread the red curry sauce over the surface of the dough.
Add mozzarella cheese, chicken, tomato slices, kaffir lime leaves and basil.
Bake in a preheated 500F oven for 6-7 minutes, or until the crust is crisp and the cheese is melty.
Remove from oven, top with cilantro and extra fresh basil, jalapenos/Thai chili (if using), slice and serve.
Note: remove the kaffir lime leaves before serving.
How to serve
Serve the Thai curry pizza with an iced lychee dragonfruit drink, lychee soda, pandan coconut milk tea, or kaffir lime soda.
How to store
Store any leftover in an airtight container in the fridge for up to 3 days.
Expert tips
Remove the kaffir lime leaves before serving -- they will be too tough to ingest. However, if they are thinly julienned, then it's fine to leave on the pizza.
Add a drizzle of hot honey, sriracha chili sauce or chili oil for a more spicy kick.
Preheat the oven for at least 1 hour at 500F or the highest temperature your oven will go.
Baking the pizza on a pizza stone or pizza steel will help achieve a crisp crust.
Substitutions
Not a fan of chicken? Try adding Thai pork meatballs, or Thai grilled beef to the pizza.

- 6 kaffir lime leaves whole or thinly julienned
- handful Thai basil reserve extra for garnish after baking
- ¼ C chopped cilantro
- 1 jalapeno or red Thai chili sliced; if you like it extra spicy

- Bake in a preheated 500°F/260°C oven for 6-7 minutes, or until the crust is crisp and the cheese is melty.
- Remove from oven, top with cilantro and extra fresh basil, jalapenos/Thai chili (if using), slice and serve.
- Repeat with the remaining dough.
