- ground pork: regular or lean ground pork
- fish sauce: gives the meatballs that extra savory flavor; choose a high-quality fish sauce for the best taste
- egg: to bind the mixture
- panko breadcrumbs: or regular bread crumbs, to hold the mixture together and give it a little body
- light soy sauce: regular soy sauce
- sea salt
- granulated sugar: balances out the flavor
- garlic: minced
- ginger: minced
- green onions: chopped
- fresh cilantro: chopped, optional

How to make the meatballs
Preheat oven to 425F.
In a bowl, combine the ground pork, egg, fish sauce, soy sauce, salt, sugar, garlic, ginger, green onions, cilantro (if using) and panko breadcrumbs.
Give everything a good mix.
Take a portion of the meat mixture and form it into a round meatball.
Place the meatball onto a large baking sheet lined with parchment paper.
Repeat with the remainder of the pork mixture.
Bake the meatballs at 425F for 20-25 minutes, or until the internal temperature reaches a minimum of 160F.
Remove the pork meatballs from the oven.
Add a squeeze of fresh lime juice (optional) and serve with steamed rice as is or with Thai sweet chili sauce (either drizzled over the meatballs, or as a dipping sauce).
Variations
Serve the pork meatballs simmered in a Thai red curry or green curry for a curry-style variation.
