These Pizza Egg Rolls are a fun way to use up leftover egg or spring roll wrappers and inject a little pizza flavor into them. Crunchy on the outside and filled with melty cheese and pepperoni, they're great as appetizers or party food.

Minimal ingredients: unlike traditional Chinese spring rolls, these are a variation of my jalapeno chicken egg rolls, and have only a few ingredients.
Easy to make: just wrap the ingredients tightly, and fry!
Customizable: change it up -- use your favorite pizza toppings instead.
Scale up to feed a crowd: double, triple or quadruple the recipe to make more for a party -- they will be gone in a flash!
Ingredients you'll need
- egg roll wrappers: or spring roll wrappers (see note below)
- pepperoni: sliced
- mozzarella cheese: 10 x 1.5" (5 oz) chunks; or you can use cheese strings/sticks and cut them into smaller pieces
- basil leaves: optional
- egg: beaten
For serving:
- marinara sauce: store-bought or homemade
Notes:
I used spring roll wrappers for this recipe because they fry up thinner and crispier.
If you want the classic, thicker texture with the signature thicker, blistered bubbles, you can substitute egg roll wrappers. The filling and cook time stay the same.
You can find these ingredients at your local grocery store.
If you prefer other fillings, feel free to add your favorite pizza toppings/fillings, such as ham, chicken, olives, ground beef, sausage, etc.
How to make pizza egg rolls
Wrap:
Place egg roll wrapper in a diamond shape on a plate.
Add two slices pepperoni to the bottom 3rd of the wrapper.
Place basil and mozzarella cheese on top.
Starting from the bottom corner, fold up and over the fillings.
Tuck in both sides and roll, dabbing the top "triangle" edges with egg to seal.
Place seam-side down on a plate or baking sheet and continue with the remainder.
Fry:
Heat a pot of oil over medium-high heat.
Once the oil temperature reaches 400F, working in batches, add in a few egg rolls and fry, about 2-3 minutes per side, or until crisp or golden brown.
Remove with a slotted spoon and drain on paper towel.
Serve warm with marinara sauce.


How to serve
Serve the Pizza Egg Rolls warm with marinara on the side as a dipping sauce.
Pair with other appetizers such as Baked Crab Rangoon, Korean-Style Hot Dogs, and Turkey & Cheese Puff Pastry Roll Ups.
How to store & reheat
Freeze the unfried Pizza Egg Rolls in a single layer on a baking sheet for about 1 hour.
Then transfer the partially frozen egg rolls into a freezer-safe bag and freeze for up to 1 month.
Fry the Pizza Egg Rolls from frozen, adding 1-2 minutes to the frying time.
You can freeze the fried Pizza Egg Rolls in an airtight container for up to 1 month.
To reheat already fried egg rolls, bake from frozen at 350F for 15-20 minutes, until heated through and crisp.
Expert tips & substitutions
Don't like pepperoni? Feel free to change it up and use creamy chicken, ham, sausage, ground beef, etc.
Prefer more filling? Adjust to your liking -- just don't stuff the rolls too full or they may explode while frying.
Tip: don't add any wet ingredients or sauces to the egg roll filling -- again, this may cause an explosion while frying.
If you have larger wrappers, you can add more filling -- also add a little longer frying time.
