Pizza Egg Rolls

These Pizza Egg Rolls are a fun way to use up leftover egg or spring roll wrappers and inject a little pizza flavor into them. Crunchy on the outside and filled with melty cheese and pepperoni, they're great as appetizers or party food.

Ingredients

  • 10 pieces spring roll wrappers or egg roll wrappers
  • 20 slices pepperoni
  • 10 x 1.5" (5 oz) mozzarella cheese chunks
  • 10 basil leaves optional
  • 1 egg beaten

For serving:

  • marinara sauce

Instructions

Wrap:

  • Place egg roll wrapper in a diamond shape on a plate.
  • Add two slices pepperoni to the bottom 3rd of the wrapper.
  • Place basil and mozzarella cheese on top.
  • Starting from the bottom corner, fold up and over the fillings.
  • Tuck in both sides and roll, dabbing the top "triangle" edges with egg to seal.
  • Place seam-side down on a plate or baking sheet and continue with the remainder.

Fry:

  • Heat a pot of oil over medium-high heat.
  • Once the oil temperature reaches 400°F/204°C, working in batches, add in a few egg rolls and fry, about 2-3 minutes per side, or until crisp or golden brown.
  • Remove with a slotted spoon and drain on paper towel.
  • Serve warm with marinara sauce.

Notes

Note: I use spring roll wrappers for this recipe because they fry up thinner and crispier. If you prefer the thicker, bubbly texture of traditional egg rolls, egg roll wrappers will work just as well.
