Ingredients you'll need
- heavy cream: or half-and-half
- milk: or non-dairy alternative
- freeze-dried strawberry: blitz whole freeze-dried strawberries into a fine powder
- powdered sugar: or other sweetener, to your taste (eg. maple syrup, simple syrup, or granulated sugar)
How to make strawberry powder
Use a spice grinder or small blender to grind freeze-dried strawberries into a fine powder.
Sift to remove any large bits before using.
Note: depending on how humid it is, freshly ground strawberry powder can clump together quickly, so only blitz as much as you require.



How to make strawberry cold foam at home
Combine heavy cream, freeze-dried strawberry powder, milk, vanilla extract, and powdered sugar in a jar or container.
Use a handheld frother or whisk together until the mixture becomes light and fluffy with soft peaks.
Avoid over-whipping.
Serve immediately, or cover and store in the fridge for up to 1 day.
Pour over your iced drink of your choice and enjoy!



How to store
Store the strawberry cold foam in an airtight container in the fridge for up to 1 day.
You may need to give the mixture a stir before using if the mixture has separated.
Expert tips
Finely grind: make sure the freeze-dried strawberry powder is ultra-fine for the smoothest texture.
Strawberry purée: blend a few fresh or thawed frozen strawberries with a touch of sugar or use strawberry sauce/syrup for extra convenience.
Adjust the sweetness: different brands of freeze-dried strawberries are sweeter than others -- taste and adjust.
Make it dairy-free: substitute heavy cream with full-fat coconut cream for a plant-based version.
Give it a stir: if the cold foam is too thick, add a touch of milk and mix with a spoon to loosen. (It can separate while sitting overnight in the fridge -- just give it a stir and it'll be ready).
