What is bostock?
Bostock is a French almond cream toast, similar to French toast and double-baked almond croissants.
It's typically made with stale brioche bread and topped with frangipane, or almond cream and flaked almonds. The frangipane is baked onto the toast directly, and finished off with powdered sugar.

Ingredients you'll need
For the toast:
- bread: preferably stale; you can use thick-cut bread, brioche, challah, or milk bread
- simple syrup: adds a little moisture and sweetness to the bread
Black sesame frangipane:
- unsalted butter: if using salted butter, omit sea salt
- granulated sugar: adds a little sweetness
- almond flour: is almonds ground into a flour; also known as almond meal
- black sesame powder: is black sesame seeds ground into a powder; if you have black sesame seeds, you can grind your own powder using a coffee grinder -- just be sure not to over grind or it will turn to a paste
- egg: to bind the mixture
- all-purpose flour: optional, but holds the frangipane mixture nicely together while baking
- vanilla extract: for flavor
- almond extract: enhances that almond flavor
- sea salt: balances out the sweetness
- flaked almonds
- powdered sugar: also known as icing sugar or confectioner's sugar
How to make it
Line a baking tray with parchment paper.
Place the slices of bread onto the baking tray. Set aside (Step 1 below).
Make the black sesame frangipane:
In a bowl, combine butter and sugar with a fork.
Mix in almond flour, black sesame powder, egg and flour (Step 2 and 3 below).
Stir in vanilla extract, almond extract and salt.
Assemble:
Lightly brush simple syrup onto each slice of bread.
Divide the frangipane mixture evenly onto the slices of bread (Step 4 and 5 below).
Top with flaked almonds (Step 6 below).
Bake at 375F for 12-15 minutes, or until lightly golden in color.
Remove from oven and let cool on the baking tray for 5 minutes.
Dust with powdered sugar and serve.
How to serve
Serve Black Sesame Bostock slightly warm or at room temperature.
Try pairing it with a pandan coconut milk tea, HK milk tea, soy milk, or iced coffee.
How to store & reheat leftover bostock
Place the Black Sesame Bostock in an airtight container into the fridge for up to 3 days.
Reheat the bostock in the microwave for 30-60 seconds.
Expert tips
You can use any type of sweet, enriched bread, such as brioche, challah, or milk bread.

Ingredients
- 4 slices bread thick-cut
- ¼ C simple syrup
Black sesame frangipane:

- 40 g granulated sugar
- 24 g almond flour
- 32 g black sesame powder
- 1 large egg
- 6 g all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- ¼ teaspoon sea salt
Garnish:
- 4 teaspoon flaked almonds
- 2 teaspoon powdered sugar
Instructions
- Line a baking tray with parchment paper.
