What is hellamyeon?
Fans of Jinny's Kitchen will know that "hellamyeon" is a dish concocted by Park Seo Joon, who portrays a kitchen chef in the Korean variety show series.
Hellamyeon refers to Korean instant noodles (Buldak fire noodles) in a super spicy sauce topped with cheese corn which is a combination of mayonnaise, mozzarella cheese and corn.
Roughly meaning "hell noodles" ("myeon" = noodles in Korean) -- the name seemingly refers to the fact that the noodles are fiery and spicy.
What is Jinny's Kitchen?
Jinny's Kitchen is a Korean variety show series airing on Amazon Prime video which focuses on a pop-up kitchen in Mexico serving Korean food and snacks.
The Korean street food showcased included Korean corn dogs, "spicy fricken," tteokbokki, gimbap, bibimbap, chibap (chicken with fried rice), and fried mandu (dumplings).
The menu would change every once in a while to cater to the tastes of the locals.
The show stars Lee Seo-jin, Jung Yu-mi, Choi Woo-shik, Park Seo-joon, and Kim Tae-hyung (BTS' V).
Caution
This dish is not for the faint of heart -- the Buldak fire noodles do pack quite a bit of spice, so it's not recommended for spice newbies.
That said, the cheese and sweet corn does tame the overall spiciness of the noodles.
Ingredients you'll need
- 1 pack Samyang Buldak Hot Chicken flavour ramen noodles (1x spicy)
- sweet corn: you can use fresh corn niblets, or frozen corn
- mayonnaise: for the corn; you can use either kewpie or regular mayo
- cheese: you can use shredded mozzarella, or a good melty cheese of your choice
How to make it
In a bowl, combine sweet corn with mayonnaise and mix well. Set aside.
Bring a pot of water up to a boil.
Add 1 pack of Buldak noodles to the water and cook according to the package directions.
Drain the noodles.
Add the seasoning pack (fire sauce) into a serving bowl.
Pour the noodles into the sauce and mix well with a pair of tongs.
Add in the dried seaweed pack and mix again.
Place shredded cheese on top of the hot noodles.
Melt the cheese in a broiler for a few minutes or in the microwave for 30-60 seconds.
Top with corn mixture and garnish with fresh parsley.
Give the noodles a good mix and serve immediately.
Note: If you don't like mayonnaise, omit the mayo and top with sweet corn (as pictured).
How to store
It's best to enjoy hellamyeon as soon as it is prepared.
The noodles will swell with time.
What to serve with hellamyeon
Try pairing the spicy fire noodles with corn dogs, Korean fried chicken, gimbap, sotteok, or Korean strawberry milk (to help cool the spice!)
Notes
If you prefer a more saucy noodle, save a few tablespoons of the cooking water from the noodles and add it into the seasoning sauce before tossing the noodles in it.
Options to melt the cheese:
Broiler: use the broiler function in the oven (be sure to use an oven-safe vessel) and broil for 1-2 minutes or until the cheese is melty.
Microwave: place the plate of noodles in the microwave for 30-60 seconds (or until melted) before topping with the corn mixture.

I'm not familiar with Jinny's Kitchen, but I love the flavors here. What an easy recipe, too! I would never have thought about combining cheese with instant ramen noodles, but I do love cheesy everything!!
