What is durian?
Durian is known as "king of the fruits" and has a yellow, creamy flesh with a large brown seed.
The exterior shell of the durian is thick, spiky and inedible, covered with "thorns."
Durian is a polarizing fruit that elicits strong reaction: either you love it or you hate it.

- Ninja Creami: a machine that processes the frozen liquid and spins it into a creamy treat
Ingredients you'll need
- Greek yogurt: thick, full fat yogurt, unsweetened
- fresh/frozen or freeze-dried durian: you can find durian in Asian supermarkets; if whole, you will need to remove the outer thick skin to get to the fleshy pods; otherwise, you can use frozen durian flesh or freeze-dried durian pieces (which I used in this case)
- whole milk: or any non-dairy alternative of your choice
- vanilla extract: use a vanilla extract with alcohol to help keep the yogurt creamy
- sweetened condensed milk: or granulated sugar; note: condensed milk is not the same as evaporated milk
Where to find?
You can find these ingredients at your local grocery store. Find durian (fresh or frozen) in Asian supermarkets. It can come packaged with just the durian flesh, or the entire pod including the seed.
How to make durian froyo
In a blender, combine Greek yogurt, durian, almond milk, vanilla extract and condensed milk (or sugar) until smooth.
Fill the Ninja Creami container to the max fill line and freeze for at least 24 hours.
Process according to the manufacturer's instructions.

How to serve & store
Serve the durian frozen yogurt as is, or pair with mango cake, mango cream pancakes, or double the durian flavor with durian cream pancakes.
Add coffee to make it an affogato, with similar vibes to a durian coffee.
Expert tips
If you have access to fresh or frozen durian, you can certainly use that instead.

Equipment

For accuracy and precision in baking recipes, use weight (metric) measurements when available.
Ingredients
- 1 C Greek yogurt
- 3 packs (60g) freeze-dried durian or frozen durian
- ½ C whole milk or non-dairy alternative
- 1 teaspoon vanilla extract
- 2-3 tablespoon condensed milk or granulated sugar, to your taste
Instructions
- In a blender, combine Greek yogurt, durian, milk, vanilla extract and condensed milk (or sugar) until smooth.

Durian is not my thing, but I'd definitely enjoy this version with mango! I've made yogurt ics cream before, but your method is quite different and something I'd try.
