These Raspberry Earl Grey Croissants are baked with a delicious earl grey tea frangipane and fresh raspberries to take ordinary croissants to a new level.

Ingredients you'll need
For the croissants:
- croissants: preferably day-old; you can use store-bought, or make your own
- earl grey tea powder: if you don't have earl grey tea powder, you can finely grind earl grey tea, or make an earl grey tea syrup by steeping the tea bags with the sugar and water while preparing the syrup
- almond flour: which is ground almonds into a flour
- large egg
- salted butter: softened at room temperature; you can also use unsalted butter and add a pinch of salt to the frangipane
- vanilla extract: use a pure vanilla extract for the best flavor
- granulated sugar: adds sweetness to the frangipane
- simple syrup: for brushing the insides of the croissant; adds a little sweetness and moisture
- fresh raspberries: washed and blotted dry
- all-purpose flour: for dusting the raspberries; helps to prevent the raspberries from bleeding during baking; you can also use cornstarch
For raspberry white chocolate:
- white chocolate: chopped; you can also use white chocolate chips
- freeze-dried raspberry powder: if you can't find freeze-dried powder, you can use freeze-dried raspberries and grind them in a coffee grinder until it turns to powder
How to make raspberry earl grey croissants
Make the earl grey frangipane:
In a small bowl, whisk together the egg, sugar, earl grey tea powder, butter, vanilla extract and almond extract.
Add in the almond flour.
Whisk until everything is incorporated.
Prepare the raspberries:
Place raspberries into a small bowl.
Add the all-purpose flour and lightly toss the raspberries to coat.
Assemble:
Preheat oven to 350F.
Use a sharp knife to cut the croissants in half equatorially.
Brush the insides of the croissant with simple syrup.
Divide the earl grey frangipane and spread about half of the mixture onto each croissant.
Add fresh raspberries dusted with all-purpose flour onto the frangipane.
Replace the croissant tops.
Place the croissants onto a baking sheet lined with parchment paper or aluminum foil.
Bake at 350F for 20-25 minutes, until lightly golden, covering with foil about half-way through the bake.
Remove croissants from oven and let cool.
Dust with powdered sugar and decorate with raspberry white chocolate (optional).
Make the raspberry white chocolate:
Add white chocolate to a small shallow bowl.
Microwave in 20-second increments, until melted.
Stir until smooth.
Stir in the freeze-dried raspberry powder until combined.
Dip and decorate the croissants with the raspberry chocolate to your liking.
How to serve
Serve the Raspberry Earl Grey Croissants at room temperature.
Pair the croissants with an Earl Grey Tea Latte/London Fog for double the earl grey flavor.
How to store
Store any leftover croissants in an airtight container at room temperature for up to 1 day.
FAQs & expert tips
Can I freeze the croissants?
Note: if you plan to freeze the croissants, leave them undecorated (don't dip in chocolate).
You can freeze the baked croissants, well-wrapped in aluminum foil.
Reheat by baking the frozen croissants at 350F for 15-20 minutes, or until warmed through.
Why add flour to the raspberries?
Adding flour to the raspberries prevents them from bleeding/releasing too much juice while they bake.
You can also dust the berries with cornstarch.

- 50 g white chocolate
- 1 tablespoon freeze-dried raspberry powder
