What is Earl Grey?
Earl Grey is a type of black tea that is flavoured with citrusy bergamot oil.
It has somewhat of a floral, citrusy taste that pairs well in baked goods.
Why you'll love this recipe
These Fluffy Earl Grey Pancakes can be made essentially in one bowl (minus the tea steeping).
They're ready in less than 30 minutes.
Adding the tea right into the warmed milk infuses the Earl Grey flavour into the pancake batter.
Ingredients you'll need
- whole milk: scalding hot; you can use any milk or non-dairy alternative
- Earl Grey tea bags: I used 2, but you can also use loose leaf tea, about 2 Tbsp
- large egg
- melted butter or vegetable oil: you can use either melted butter or a neutral vegetable oil; melted butter will give the pancakes a little more flavour
- vanilla extract: use a high quality vanilla extract for the best flavour
- lemon zest: optional, but highly recommended
- yogurt: use a full-fat thick/Greek yogurt
- granulated sugar: adds a little sweetness; you can use any sweetener you like
- all-purpose flour: regular all-purpose flour will work fine for these pancakes
- baking powder: acts as a leavener and helps them become fluffy
- baking soda: a second leavener that reacts with the yogurt (acid) to create bubbles and provides more lift and browning
How to make the pancakes
In a mug, add the scalding hot milk along with the 2 Earl Grey tea bags and leave it to steep for 5-10 minutes, and let cool a little. Remove the tea bags / or tea leaves.
In a large mixing bowl, whisk together the egg, melted butter, vanilla extra, lemon zest, and yogurt.
Add the granulated sugar and give it a whisk.
Sift in the all-purpose flour, baking powder and baking soda.
Pour in the cooled Earl Grey milk and fold with a spatula to incorporate the mixture. Be careful not to overmix.
Preheat a griddle (or large frying pan) over medium heat.
Add about 1 teaspoon of butter or vegetable oil to the griddle.
Scoop about ¼ C of pancake batter and dollop it onto the griddle. (Depending on how large your frying pan or griddle is, you may be able to fit on a few more pancakes).
Cook for 1-2 minutes, until bubbles start to appear on the surface.
Flip with a spatula and cook for another 1-2 minutes.
Repeat with the remainder of the batter.
Serve warm with butter, maple syrup, and fresh fruit such as blueberries.
How to store
Store any leftover pancakes in an airtight container in the fridge for up to 5 days.
Alternatively, you can layer parchment paper between the pancakes and freeze them for up to 2 months.
How to reheat
To reheat the Earl Grey Pancakes from the fridge or from frozen, microwave the pancakes until warmed through.
FAQs & troubleshooting
Can I make a double batch?
Yes, you can easily double the recipe to make more pancakes.
Why did my pancakes become tough and rubbery?
It's important not to overmix the pancake batter. This causes the gluten strands in the flour to form and produces a tough texture.
Can I omit the lemon zest?
Yes, you can omit the lemon zest.
Does Earl Grey contain caffeine?
Yes, like any black tea, Earl Grey does contain caffeine.

Fluffy Earl Grey Pancakes
For accuracy and precision in baking recipes, use weight (metric) measurements when available.
Ingredients
- 125 ml whole milk hot
- 2 Earl Grey tea bags or 2 tablespoon loose leaf tea
- 1 large egg
- 1 tablespoon melted butter or vegetable oil + extra for greasing the pan
- 1 teaspoon vanilla extract
- 65 ml plain yogurt
- 1 tablespoon lemon zest
- 30 g granulated sugar
- 130 g all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
For serving:
- 1 C fresh blueberries
