What is bingsu?
Bingsu is a Korean shaved ice dessert.
The most common version is patbingsu, which is a shaved ice with sweet red bean paste.
There are many variations of shaved ice desserts in Asia, including kakigori (Japanese), ais kacang (Malaysian), and halo-halo (Filipino).
Why you'll love this recipe
Simple: as long as you have an ice shaving machine, that's pretty much the hardest part of this dessert.
Minimal ingredients: it only takes fresh mango, frozen water, and a little sweetened condensed milk to turn these humble ingredients into a delicious, chilled dessert.
Special equipment you'll need
- ice shaver: I used a KitchenAid ice shaver attachment but there are various contraptions out there that can also make fluffy shaved ice
Ingredients you'll need
- ice
- fresh mango: diced; I like to use honey mango/Ataulfo as it has a sweet, creamy taste
For serving:
- sweetened condensed milk
- vanilla ice cream or mango ice cream, optional
How to make mango bingsu
Remove the ice puck from the freezer and insert into your ice shaver.
Shave the ice according to the manufacturer's directions into a serving bowl.
Top with diced fresh mango and drizzle with sweetened condensed milk.
Add a scoop of vanilla ice cream if desired.
Optional toppings
You can add different toppings to your mango bingsu such as
- fresh fruit: eg. coconut, durian
- mochi/dango
- sweetened beans: red bean, mung bean
- cheesecake pieces
- tapioca pearls, or sago pearls (also used in mango pomelo sago)
- grass jelly, coconut jelly, lychee jelly
Or change up the flavor and do a matcha shaved ice.
Enjoy immediately.
Expert tips
If you prefer a more milkier shaved ice, you can use whole milk or coconut milk in place of water.
Double up the mango flavor and add mango ice cream.

- 1 fresh mango diced
For serving:

I'm not familiar with this dessert, but I love that it's light and low in calories. I bet you can also infuse the ice (with tea, syrup, etc) to make it even more fun. Now, I need to get an ice shaver next summer! 🙂

So refreshing on a warm summer's day. Mangoes are so sweet and when you combine it with the shaved ice with condensed milk - it's so good. We used a dairy free coconut condensed milk and a lactose free ice cream and it was delish!
