Passionfruit Yogurt Popsicles

These Passionfruit Yogurt Popsicles are creamy, tangy and delicious, featuring thick yogurt lightened with cream and pops of passionfruit studded throughout.

Ingredients

  • 250 ml thick Greek yogurt
  • 125 ml heavy whipping cream at least 36% milkfat
  • 100 ml passionfruit puree (sweetened) or to taste

Instructions

  • Add thick Greek yogurt to a large mixing bowl. Set aside.
  • In a separate bowl, whisk heavy whipping cream until firm peaks.
  • Fold the whipped cream (in thirds) into the Greek yogurt to lighten, until all incorporated.
  • Pour in the passionfruit puree and fold a few times, just until streaky.
  • Transfer the mixture into a large pastry bag and snip off the tip.
  • Pipe the mixture into the popsicle molds.
  • Give the molds a few taps to release any trapped air bubbles.
  • Place the lid on the mold and add in the popsicle sticks.
  • Freeze popsicles for at least 6 hours, or until frozen firm.

Notes

The popsicle molds I used hold about ⅓ C each, about 80ml. Yield will depend on the size of your molds and how much air is whipped into the cream.
