Cut the 2 vanilla wafers in half lengthwise so you have 4 "finger" pieces.
In a microwave-safe bowl, heat the white chocolate in 20-30 second increments until melted.
Stir in the coconut oil and matcha powder until well combined.
Use an offset spatula to coat the surface of the vanilla wafer "fingers" (this will now be the "bottom") with the matcha chocolate and repeat with the remainder.
Place into the freezer or fridge for the matcha chocolate to set.
Once set, flip the vanilla wafer "fingers" so the matcha chocolate side is on the bottom.
Use an offset spatula to coat the surface and sides of the vanilla wafer with the remaining matcha chocolate. (You may need to rewarm the chocolate to ensure a smooth coating).
Pop the tray back into the freeze or fridge for the chocolate to set, about 5-10 minutes.
To join the two matcha Kit Kats together, add a bit of matcha chocolate to the bottom of the Kit Kat fingers and "glue" together.
Once the matcha Kit Kats have set, break off a piece and enjoy!
