Ingredients

Dressing:

  • ¼ cup Greek yogurt or mayonnaise
  • 1 tablespoon curry powder adjust to your taste
  • 1 teaspoon lemon juice
  • 1 teaspoon honey or sweetener
  • ½ teaspoon sea salt to your taste
  • ¼ teaspoon black pepper to your taste

Main:

  • 2 cups cooked rotisserie chicken chopped (I used 160g).... which is ½ C?
  • ½ cup red seedless grapes halved
  • ½ cup celery finely diced
  • ¼ cup red onion finely diced
  • 2 stalks green onion chopped
  • 2 tablespoon cilantro chopped

Make the dressing:

  • In a bowl, combine the yogurt, curry powder, honey, salt, and pepper and stir until smooth.

Assemble:

  • In a large bowl, add in the chopped, cooked chicken, grapes, celery, red onions, green onions, and cilantro (if using).
  • Add in the curry dressing and fold gently to incorporate the ingredients.
  • Cover with plastic wrap or a lid, and refrigerate for at least 30 minutes to let the flavors meld.

Serve:

  • Serve with pita bread, crackers, with mixed greens, in a sandwich, tortilla wrap, or on its own.
