Dressing: ¼ cup Greek yogurt or mayonnaise 1 tablespoon curry powder adjust to your taste 1 teaspoon lemon juice 1 teaspoon honey or sweetener ½ teaspoon sea salt to your taste ¼ teaspoon black pepper to your taste Main: 2 cups cooked rotisserie chicken chopped (I used 160g).... which is ½ C? ½ cup red seedless grapes halved ½ cup celery finely diced ¼ cup red onion finely diced 2 stalks green onion chopped 2 tablespoon cilantro chopped
Make the dressing: In a bowl, combine the yogurt, curry powder, honey, salt, and pepper and stir until smooth.
Assemble: In a large bowl, add in the chopped, cooked chicken, grapes, celery, red onions, green onions, and cilantro (if using).
Add in the curry dressing and fold gently to incorporate the ingredients.
Cover with plastic wrap or a lid, and refrigerate for at least 30 minutes to let the flavors meld.
Serve: Serve with pita bread, crackers, with mixed greens, in a sandwich, tortilla wrap, or on its own.
