Reflections On 2017 & Green Matcha Waffles With a Secret Ingredient

2017 is quickly coming to a close, and I can’t believe how quickly my kids are growing up, and how much has happened this year.

Some reflections/highlights in my personal and family life:

– Starting this blog to share and document my passion for home cooking and baking!
– Our eldest attaining his yellow belt in TKD
– Our littlest’s first time on a plane to Ottawa
– Taking our first *extended* road trip to Edmonton in the summer to visit family
– Our eldest starting Kindergarten
– Taking an online food photography course with Sarah from Broma Bakery
– Continuing to connect with other like-minded creatives via the Instagram community
– Developing my skills as a freelance food photographer

2017 was a year of discovery, learning, and trying to find my voice in this vast blogosphere. You guys made my Matcha Milk Jam the top post, followed by my Vegan Aquafaba Blueberry Cheesecake Macarons, Vegan Matcha Green Tea Spread, Earl Grey Milk Jam Spread and finally, rounding out the top 5, my Matcha Brochi.

I am so grateful to you, my readers for reading, following, engaging along in my food journey, and showing me your creations! I hope to continue delivering more delicious and innovative recipes in the coming year! 2018 will be an amazing year!

Healthy Peppermint Patties

Healthy Peppermint PattiesWowza, it’s one more week until Christmas! Where has the time gone? As an adult, it feels like Christmas comes faster and sooner with every passing year. But I’m sure for my little ones, it must feel like it takes forever to come.

But it’s full-swing holiday season, so I’m doing another peppermint post! If I could have peppermint all year round, I probably would. It’s one of my favourite flavours. When Starbucks rolls out their holiday drinks, my go-to is their white chocolate peppermint mocha. In fact, I currently have more peppermint extract than vanilla in my kitchen. Chocolate Peppermint Crinkle CookiesSometimes I wish I had more hours in a day to do the things I want to do. I’m an early riser and my personality is that I like to get things done right away so that I can relax later, yet I feel like I’m constantly running a rat race. This is especially true once I had kids. In fact, I used to be in bed at 10pm every night. I know, I totally sound like a grandma. But these days… if I want to fit in working on the blog, or even just reading a cookbook, I’m pushing my bed time past 11:45pm.

I’ve been wanting to make these crinkle cookies since I saw Martha Stewart make them years ago, but I never found the time until now. With Christmas around the corner, I needed to make some cookies that scream “CHRISTMAS!”  I think these crinkle cookies are unique enough that they remind me of the holidays.  (more…)
