Happy Birthday, My Angry Bird

I was sitting in the car, waiting for my son during his taekwondo class when I sauntered down memory lane. We just met his Kindergarten teacher during the parent-teacher conference, and discussed that his birthday was coming up. She told us we were welcome to bring in treats for his class on his birthday, but I hadn’t made up my mind as to what I was going to bring.

Teacher mentioned…

Something small for the kids, not too messy, no magicians.

At first I intended on bringing mini cupcakes, because who doesn’t like cake in a miniature form?

And then I thought back to my life prior to having kids… where I would stay up way past midnight making various character cake pops while still working my day job and pregnant with my son.

Then it hit me.

Angry Bird cake pops.

So fitting, because my son loves Angry Birds: especially Mr. Red. And when I made cake pops, one of my most popular ones was that very red angry round bird. When the exhibit was at the PNE last year, he insisted that we go into it. He even went on the zipline (to knock down the green pigs) by himself to my amazement. He has seen the movie like a zillion times, different shirts, plush toys, and even made Daddy carve out his Halloween pumpkin last (and this) year into an Angry Bird. LOL. (At least he switched it up to a “Space Angry Bird,” as he proudly announces).

For me, this is a special moment where I can bring to life something that he adores, handcrafted by his Mommy. I’m not sure how long this phase of Angry Birds love will last for him, so why not now? You may be thinking, what’s the big deal? Well, it’s in the fact that I typically don’t allow my kids to eat foods with artificial colours (especially red or yellow), and both of those colours are definitely in Mr. Red. So this is a one-off treat that I hope conjures a magical experience in him which in turn, gets to share with his classmates.

Happy 5th Birthday, my dear son,

You have an infectious energy that lights up every room you run into, and you are the most charming, witty boy I know. You’re young, but you live and you love fully. I am so lucky to be your mother and to witness you grow into the boy you are today. Thank you for bringing so much JOY in my life. May you never cease to find wonderment in your life.

Pumpkin Chai Loaf

You didn’t think I was going to let October go without a pumpkin post, now did you?

My mom got me a new loaf pan! (For 89 cents, apparently). LOL. But it’s the right size for making loaf cakes, since the one I had was too big for my liking. So since I’ve got a proper loaf pan, I’ve got loaves on the brain.

Speaking of things that rhyme with brain….

This rain!

We’re in the middle of rainy season here in Vancouver — and although I do love Fall, I’m not the biggest fan of the drizzly weather. On the bright side, the rain means that I get to stay inside and experiment with some baking.


Chickpea Peanut Butter Waffles

It’s already October, and seriously, the last month has been a blur. With my eldest being in Kindergarten, I’ve been racking my brain for quick and healthy breakfasts that we can eat before he rushes off to school.

Lately, I’ve been experimenting with other legumes like chickpeas. I’ve found that many of the recipes for chickpea waffles online are savoury, and use chickpea flour. While that’s great (I love chickpea flour waffles with ham and cheese), I’ve come up with another variation of my Healthier Black Bean Waffles … by swapping the black beans for chickpeas (or garbanzo beans).
