Spam Fried Rice
Spam Fried Rice is a comforting dish that’s quick to whip up and incredibly satisfying. With crispy, cubes of Spam, egg and rice all tossed together, this fried rice is perfect for a lazy weeknight dinner or a next-day lunch.

1 tablespoon vegetable oil 2 large eggs beaten 1 ½ C cooked white rice preferably day-old and cold 1 tablespoon soy sauce ½ can SPAM luncheon meat diced into cubes ½ teaspoon white pepper or black pepper 1 teaspoon sesame oil 1 stalk green onion chopped
In a large wok, heat up 1 tablespoon of vegetable over high heat. Add in the SPAM luncheon meat, and fry until slightly crisp.
Remove the SPAM, and set aside. Add beaten eggs into the hot wok and scramble, until just cooked.
Add the cold rice in with the eggs, breaking up any clumps. Cook for a few minutes, stir-frying the rice with the egg.
Drizzle in the soy sauce over the rice.
Return the SPAM into the wok and add white pepper (or black pepper) and continue to cook, ensuring everything is heated through.
Drizzle in sesame oil and add in green onions.
Remove from heat and serve immediately.
