Love Crunch Granola (Nature's Path Copycat)

This Love Crunch-Inspired Granola features crunchy clusters, dark chocolate chunks, coconut & berries, made at home with simple pantry ingredients.

Ingredients

  • 6 tablespoon maple syrup
  • 2 tablespoon coconut oil melted
  • 2 tablespoon cocoa powder
  • 2 teaspoon vanilla extract
  • ½ teaspoon fine sea salt
  • 2 C rolled oats
  • ¼ C fine coconut flakes reserve half (2 Tbsp) for after baking

Additions:

  • ½ C dark chocolate chunks
  • 1 C freeze-dried strawberries or raspberries slightly crushed if large chunks

Instructions

  • Preheat oven to 300°F/149°C.
  • Line a large baking sheet with parchment paper.
  • In a large bowl, combine maple syrup, coconut oil, cocoa powder, vanilla extract and salt.
  • Add in rolled oats. Mix well until evenly coated.
  • Transfer mixture to the prepared baking sheet and press mixture firmly together.
  • Bake at 300°F/149°C for 20 minutes, reduce to 200°F/93°C for 30 minutes, or until the granola is dry.
  • Remove from oven and let completely cool.
  • Add in dark chocolate, freeze-dried strawberries and 2 tablespoon of coconut flakes.
  • Mix well and store in an airtight container at room temperature for up to 1 week.
