    Overnight Oats with SunButter and Raspberry Jam

    An easy recipe for overnight oats with SunButter and raspberry jam. Stick it in the fridge the night before and you've got breakfast covered.

    It's now June and I don't know where half the year went! Seriously.

    It was only March like last week!

    Anyhow, I've been taking as many shortcuts lately so that I don't have to spend too much time making breakfast in the morning.

    One of my favourite ways to do this is by prepping my breakfast the night before.

    With these Overnight Oats with SunButter and Raspberry Jam, it's as simple as measuring out the oats, pouring your milk of choice on top, and then setting it in the fridge overnight. I love how simple, nutritious, and easy it is to make.

    I usually use quick rolled oats (don't use steel cut oats), milk (you can use coconut milk if you have allergies to dairy), and 2 tablespoons of Organic SunButter. You can enjoy it as is, or top with the fresh or frozen fruit of your choice (I've always got bananas and raspberries on hand).

    If you're feeling a little indulgent, add a little raspberry jam for sweetness and you're on your way to having a nourishing breakfast. Change up the toppings and try chia seeds, or coconut flakes. Add cinnamon and nutmeg if you're into spice.

    When the oats are soaked overnight in the milk, they get softened so it's easier for you to digest. Oats are full of fiber, which help you to feel fuller longer, and could help speed up your metabolism. I know when I eat these Overnight Oats, I last until lunch time without needing a mid-day snack. Adding nut-free Organic SunButter increases the protein content and also keeps me from getting hungry.

    Ingredients

    • ½ C quick rolled oats
    • ½ C milk of your choice
    • 2 tablespoon Organic SunButter
    • sliced banana
    • raspberry jam
    • raspberries
    Prevent your screen from going dark

    Instructions

    • Add oats into a jar. Pour in the milk and give it a quick stir. Secure with a lid and place into the refrigerator overnight.
    • In the morning, remove the oats from the fridge and give it another stir. If it's too thick, add a little more milk to your liking.
    • Top with SunButter, sliced bananas, raspberry jam, and raspberries.
